Are you too busy to cook healthy meals for yourself and your family? Are you too busy to bring a healthy lunch with you to work each day?
Sorry, but I don't believe you! This excuse just doesn't fly with me!! And this is why.....just this morning, I roasted a 7 pound whole chicken. This took 5 minutes to prep, and 90 minutes of alone time in the oven (for the bird, not for me). I'll be feasting on this birdie for a good part of the work week. Simply add some veggies on the side, plus some healthy fat (avocado, nuts, olive oil salad dressing, etc.) and you've got a complete, delicious, and healthy meal.
My super secret recipe is this:
1. Buy your bird. I buy my whole, organic birds at the butcher shop.
2. Coat bird with olive oil.
3. Sprinkle on, or brush on, salt and pepper.
4. Roast in the oven @350 degrees, for approximately 15 minutes per pound.
Can't get much easier than that! No excuses!
