One Meal Fits All

The most versatile healthy meal ever invented, must be the egg scramble. Everything delicious and nutritious is all rolled into one little blob. And it hits the spot for breakfast, lunch, or dinner!

I typically just cut up whatever veggies I happen to have in the house, pan fry them, and then scramble them up with the eggs. My latest scramble included green peppers, orange peppers and yams, because that's what I happened to have on hand.

You can totally jack up your nutritional bang for the buck by adding things like broccolli, spinach, onions, squash, or tomatos. If you like, add a little bit of feta or goat cheese on top for extra tastiness! And of course, avocado would be a great addition as well. Really need to load up on veggies? Pair this with a healthy green salad.
